Ingredients:
2 cans cream of chicken soup
2 cans chicken broth
1 can Rotel
ground cumin to taste (about 1 tsp, or more for zip)
1-2 cups diced cooked chicken
1 c. corn (optional)
cooked rice (optional)
Cook ingredients in crockpot on low setting or in large pot over stove top. Add broken up tortilla chips and sharp shredded cheese to each bowl. Eat and Enjoy!

Ultimate Picnic Potato Salad
I love potato salad. It reminds me of summer family gatherings around the BBQ, watermelon seed fights and laughter with friends. This is one of my favorite recipes, and I can't remember who gave it to me. It may have been Aunt Dar or Grandma Shirley. Either way, this is the BEST!
Ingredients:
5 lbs Potatoes (If you use red or Yukon gold, don't bother to peel. Otherwise, peel) chopped, boiled and cooled
5 hard boiled eggs, cooled
2 Tbs. grated onion
3-4 finely chopped dill pickles
1 c. mayo
mustard, to taste (I like mine more yellow and tangy)
Mix well and add
1 tsp. sugar
1/4 c. milk
Let it sit in the fridge for several hours to combine flavors. It is awesome. Just remember to keep it on ice if you intend to serve it outdoors. No one wants to get food poisoning ever.
